Living so close to the beach, I am lucky enough to be able to buy prawns straight off the boats. Just before curfew was imposed again, I bought kilo of jumbo prawns for Rs1,400 (approx. £5.70). Enough for eight portions.
This is so quick and easy to make. Just 5 minutes preparation 15 minutes cooking time.
You need a clay cooking pot or heavy based pan with lid
Ingredients – serves 2
Whole shell on Jumbo or king prawns
1 table spoon chilli powder
1 teaspoon salt
½ teaspoon salt
2 cloves garlic smashed
½ red onion sliced
milk from 1/4 coconut (approx. 200ml)
Method
Wash prawns and place in cooking pot.
Add the chilli, salt & pepper and coat prawns. You can add more or less spice according to your taste.
Add cloves and onion with a little water.
Cover with lid and bring to the boil, stir gently and turn the heat down to just above a simmer.
Cook for about 10 minutes until the shells are a good pink colour.
Add the coconut milk and taste for seasoning.
Cook gently for another 5 minutes.
