Bitter Gourd Sambal – Karavila Sambal

The name and appearance can be off putting but this knobbly member of the squash family has lots of health benefits.  It is a rambling vine growing plant. High in vitamins, fibre, iron and minerals, low in calories.

This is one on my favourite ways of eating it. The added advantage is the dish is very quick and easy to prepare

For 2 people

Ingredients

1 bitter gourd

½ medium onion

2 tomatoes

½ capsicum

Juice of ½ lime

Salt & pepper

Method

  • Wash and slice the bitter gourd finely, push out the seeds and discard
  • Deep fry in coconut or sunflower oil until rich golden brown
  • Drain on kitchen paper
  • Finely slice onion, capsicum and tomato
  • Mix all together in a bowl
  • Season with salt and pepper
  • Add lime juice to taste and mix well

    That is interesting, especially to see it growing first. If I’d seen the cooked dish first I’d have thought octopus! #shouldhavegonetospecsavers 🤣
