Banana Muffins

Bananas are so cheap that I always buy too many and then have to think of ways of using them up.  

For this recipe I use 6 ambul or seeni when they get overripe, if you are in UK and don’t have the choice then 3 large bananas will be about right. I’ve also been using golden granulated sugar which is all I’ve been able to get.

Makes 12.  You need a muffin tin & paper cases
Pre heat oven to 175C.

Ingredients

6 overripe small bananas mashed.
1 egg lightly beaten.
1/3 cup melted butter.
¾ cup sugar.
1½ cups flour.
1 teaspoon baking powder.
1 teaspoon baking soda.
½ teaspoon salt.

Method

Mix sugar and butter together, beat in egg and stir in the bananas.

Sift dry ingredients together and fold into mixture.

Spoon into paper cases.

Bake for approx. 25-30 minutes.

Cool and store in an airtight container (I keep mine in the fridge as well).

Variations

A generous pinch of cinnamon or a handful of chocolate chips have both worked well, maybe I will try chopped cashew nuts next

You can also make mini muffins which will only need 10-15 minutes baking
